Cranio sacral is a great option for stroke. Just check with the doctor. I've worked with several stroke patients, specifically with arm problems and they had positive response after several sessions. Energy work in general is often good as is MFR which I see you are trained in. I believe the Upledger Institute might have some research on CST and stroke as well if you visit their website.

Laura if you have not taken the course
then I would find an experienced therapist to work with your dad.
DVD's just don't cut it in my opinion.
